Filipa Pato
Between Porto and Lisbon is Bairrada. Due to the proximity of the Atlantic Ocean, this is one of the areas in Portugal with the most rainfall. In the lowlands the terrain is varied, consisting mainly of clay and lime. At this location, on 12 hectares scattered on plots throughout the area, using biodynamic agriculture and minimal intervention in the winery, Filipa Pato and her husband, Belgian sommelier and restaurateur William Wouters, produce “Vinhos Autênticos Sem Maquilagem”, translated as: Authentic Wines and without makeup. For us, they are clean, fresh and elegant, made of fruit with a soul, which have an authentic and complex taste and clear handwriting of the winemaker. These are some of the most impressive Portuguese wines. You should try the land-specific varieties Baga, Bical, Arinto, Cercial and Maria Gomes in the beautiful interpretation of Filipa Pato.

Baga
Baga is a red grape variety found on the central coast of Portugal and is especially popular for DO Bairrada wines in the Beiras region. It is characterized by a thick skin and small grapes. This is also reflected in the meaning of its name - "berry" or "drop". However, these gentle names do not at all suggest the tannin-like, astringent nature of the wines produced by Baga. Due to its high fertility, the production of distinctive high quality red wines with structure and balance of this variety requires great care and attention in the vineyard. The variety is late ripening and needs a dry and warm growing season to reach full phenolic maturity. Its naturally high acid content, however, determines balance and body in the final product, although the grapes can be picked late in the season. Some producers, including stars such as Luis Pato, have been experimenting successfully with sparkling Baga wine, picking part of their harvest earlier. Baga is also present in the famous slightly sweet Mateus Rosé.
