The vineyard plots with Shiroka Melniška vine are located in the land of the village of. Hersovo and s. Kromidov and are about 50 years old, which contributes to the elegant structure and terroir expression in the taste of the wine. The Pinot Noir vineyard is 18 hectares in size and is located in the town of Kavarna, where the climate is Black Sea and the constant breezes have a beneficial effect on the vines, preventing a sharp rise in sugars and helping to maintain optimum acid levels. The vineyards are cultivated organically by following biodynamic practices, the aim being to promote healthy and deep root growth.

Pinot Noir is a relatively early maturing variety and the harvest takes place on 09 September. Broad Mill Vine is a late maturing variety, which is harvested around 20 October. The two varieties are vinified separately and the Broad Vine is aged in oak barrels for one year. After reaching the desired organoleptic profile, the two wines are blended in proportions of 70 % Broad vine and 30 % Pinot Noir.

The color is ruby red. Complex aroma with predominant notes of red and black fruits complemented with spices and tobacco. The wine is rich, spicy, with well-integrated tannins. The aftertaste is long, with a pleasant feeling of freshness and sweetness.

AYA Estate Vineyards is a company, the successor of viticultural knowledge for several generations, with over 80 years of experience in artisanal wine production. These traditions determine the direction of the project - the revival of endemic Bulgarian varieties and focusing on the terroir expression of wine, thanks to working with nature, not against it. The main massifs are located in southwestern Bulgaria, in the village of Harsovo, Melnik region, but also have 10 hectares in northeastern Bulgaria, only 2 km from the Black Sea, near Cape Kaliakra, which determines the freshness of white wines produced by Seewines. , especially emblematic of which is Sauvignon Blanc. The vineyards in Harsovo, from which the Shiroka Melnishka vine grapes are extracted, are over 50 years old, and the new plantations with Sira, although still young, impress with their potential and the pronounced peppery characteristics of the variety. Seewines follows the principles of biodynamics, both in the vineyards and in the wine production itself, maintains the biodiversity in and around the vineyards and practices the most sparing and environmentally friendly viticulture.

The Struma Valley region covers the Southwestern part of Bulgaria and the Bulgarian part of Macedonia. The climate of the region is specific and is highly influenced by the warm currents from the Mediterranean Sea. The main grape varieties here are the local endemic Shiroka Melnishka vine, Melnik 55 (cross between Shiroka Melnishka vine and the French variety Valdigie), but also the international varieties Cabernet Sauvignon, Merlot, Syrah and others. Due to the dryer climate and the higher temperatures, the wines develop warm southern tones in the aroma, with nuances of ripe fruit and a densely rich body. Of particular interest are the wines from Shiroka Melnik vine, partly due to the fact that the variety is difficult to grow because it ripens in late autumn. Today, the region is the most dynamically developing in Bulgaria, with many new, small, family owned wineries, increasingly focused on the quality and terroir expression of the wines they produce.

Broad-Leaved Melnik

Melnik or Shiroka Melnishka loza ( Broadleaved vine of Melnik ) is an exceptionally rare variety grown only in the region of the town of Melnik and specifically in the appellation of Harsovo village. Melnik can produce powerful wines that respond well to extended maturation in oak. They tend to be exotically perfumed, richly textured and have ample tannins. Actually, the variety benefits from the long, stable autumn weather of the region and the main challenge for the producer is to have the patience to wait for the full ripeness of this late ripening variety - which usually happens in mid-October.
