Black C rose by Santa Sarah 2021
Гроздето се селектира и бере рано сутрин на ръка, в малки касетки по 10-12 килограма. 80 % от този купаж се получава посредством метода „Saignée”. Тук гроздето е предназначено за производство на червено вино, а не на розе. Гроздовата каша престоява за кратко (от 4 до 12 часа) при температура около 15°С. След като е получено желаното оцветяване се източва около 10-20% от мъстта, която е предназначена за направата на розе. 20 % от този бленд е направен по технологията на директно пресоване на цели гроздови зърна. Алкохолната ферментация протича в съдове от неръждаема стомана в продължение на 3 до 4 седмици. Протича при по-ниски температури, редуктивно третиране на мъстта с цел запазване на ароматите.Отлежаване на виното в съдове от неръждаема стомана върху фини утайки за период от 3 месеца.

Black Sea region
The Black Sea coast is an area where nearly 30% of Bulgarian vineyards are concentrated. The climate, with warm summers and mild winters, is suitable for growing white varieties. Autumn is warm and long, which favours the accumulation of enough sugars to produce fine white semi-dry wines. Over 50% of white grape varieties in Bulgaria are grown here, and the most common are Dimyat, Riesling, Uni Blanc, Muscat Ottonel, Traminer, even Sauvignon Blanc. The wines have a pleasant fruity aroma, rich taste and elegant freshness. The old endemic variety Dimyat, in addition to being suitable for dry, is often used for the production of dessert wines, as well as for fine aromatic distillates.

Syrah
Syrah/Shiraz - Two names of one and the same grape variety - the winemakers from the Old world use Syrah and the ones from the New world - Shiraz. The grape is a deep red, even the pulp, therefore this variety is not suitable for blanc de noir wine style. Syrah wine has specific floral aromas in its youth and develops notes of herbs and spices such as white and black pepper as it ages. These varietal specifics come out better when blended with a small amount of Viognier - a method gaining popularity more and more around the world. Syrah produces wines capable of ageing and improving over decades, which enhances its plummy and almost oriental spicy flavours.
