Santa Sarah Syrah BIN 40 Cabernet Sauvignon 2021
Cabernet Sauvignon 85%, Merlot 10%, Cabernet Franc 5% from the winery's own 8-year-old vineyards in the village of Gorica. The soils are sandy loam, cabonatic black earth and humus-carbonate; the altitude ranges from 60 to 125 m and the exposure is south-south-west. The Cabernet Sauvignon vineyards are 30 hectares in area, the plots have 500 vines per hectare and the yield is 500 kg/ha. The grapes were selected and hand-picked in small crates from 10 to 15 October.
Technological steps: cold maceration at 8°C in French, German and Austrian oak wooden vessels with a capacity of 3 500 and 5 200 kg, in thermo-insulated stainless steel fermenters of 5 000 l and in Austrian oak rotobarrels with a capacity of 450 kg, for a period of 7 days. Fermentation takes place for 3 weeks in stainless steel vessels and French and Austrian oak barrels, followed by maceration at 31°C of the fermented grapes for 3-4 days. The malolactic fermentation takes place in 225 l oak barrels over a period of 4 weeks.
The wine is aged for 12 months in new (20% of the wine) and used (80% of the wine) French barriques. This is followed by 4 months of bottle ageing before the wine is released to the market.

Black Sea region
The Black Sea coast is an area where nearly 30% of Bulgarian vineyards are concentrated. The climate, with warm summers and mild winters, is suitable for growing white varieties. Autumn is warm and long, which favours the accumulation of enough sugars to produce fine white semi-dry wines. Over 50% of white grape varieties in Bulgaria are grown here, and the most common are Dimyat, Riesling, Uni Blanc, Muscat Ottonel, Traminer, even Sauvignon Blanc. The wines have a pleasant fruity aroma, rich taste and elegant freshness. The old endemic variety Dimyat, in addition to being suitable for dry, is often used for the production of dessert wines, as well as for fine aromatic distillates.
