XO means “extra old” and these are the letters assigned to the finest spirits, on condition that they have been aged in wood for at least ten years, reaching perfect maturity. Sibona’s XO project was born several years ago with the meticulous and skillful selection of limited quantities of the best grape marc from the most famous Langhe and Roero vineyards. The Nebbiolo (Barolo and Barbaresco) and Barbera varieties were used by the master distillers to create a blend unique in the world of fine quality Grappа, a special cuvée. Sibona’s Grappa XO spends more than ten years ageing in small French oak tonneaux in the distillery’s historic cellars. The result of so much passion is a spirit with warm and complex flavors, with a strong and innovative personality, dedicated to real connoisseurs.

An extra old blend made with the marc of Nebbiolo and Barbera and of grapes used to make Barolo and Barbaresco, selected during the harvest. Distilled exclusively in-house, in copper stills, employing all the expertise of the oenologists and master distillers. Long ageing in stainless steel tanks and further ageing for over ten years in French oak tonneaux.

Amber color with golden highlights. Refined and elegant. Initial vinous aroma evolving into vanilla and red fruits. Smooth, silky and complex palate. Flavors of tobacco, blackcurrants and oak. Lingering and persistent finish. Perfect pairing with dried fruit, walnuts, almonds, sweets and chocolate. Also delicious with mature cheeses. The perfect companion for a cigar.

Distilleria Sibona

Distilleria Sibona

The Antica Distilleria Sibona is located in the Roero zone, in the communal district of Piobesi d’Alba, a few kilometers from the city of Alba. The distillery is located in the center of an important wine area, where the most typical vines from Piedmont are cultivated: Nebbiolo vine from which Barolo, Barbaresco and Roero wines are created according to their own zones of production, besides Barbera, Dolcetto, Moscato, Chardonnay, Arneis and Brachetto vines. Sibona is one of the historical distilleries in the Piedmont region and can boast the oldest distillation license, the N° 1, issued by UTF (the official institution that regulates all the operations having to do with distilleries). This is a synonym for a great past and prestige. From its origins, Sibona distillery has handcrafted its “grappas” from single vine varieties. The distillation process consists of vapor production from fresh marc soon after it arrives in the distillery. Originally, distillation was carried out by means of an old locomotive, which, in time, gave way to copper alembics. Marc is distilled no sooner it arrives in the distillery, which allows the extraction of the grape’s full aroma. Besides the selection of the best marc of the zone, Sibona’s grappas reach high quality levels thanks to accurate distillation, constant updating and improvement of the equipment, the experience of two oenologists who have been working in distillation for years, the elimination of the first and last portions of the distillates, and last, but not least, a long ageing period in barrels, which renders the grappas not only soft and pleasant but also more complex and aromatic expression. The distillery uses a variety of cask types, such as port, sherry, madeira, whisky, rum and sauternes casks, with which it produces its special grappa reserves, including the XO grappa aged for over 6 years in French oak.
