The grapes for Ice Gergana are harvested in early December when they are raisined and frozen. The idea behind the technology is to freeze only the water in the grapes, so that after slow pressing, only concentrated grape must is separated. This is followed by a slow four-month fermentation, after which the wine ages for 12 months in old oak barrels, followed by six months of bottle aging.

Tsarev Brod

Tsarev Brod is a family wine cellar located in the village of Tsarev Brod, Shumen region, near the only rock bas-relief in Europe - the Madara Horseman - a UNESCO World Heritage Site. The winery has over 270 decares of its own vineyards, in which the Sauvignon Blanc, Traminer, Chardonnay, Riesling and Pinot Noir varieties are grown. The terroir is determined by the climatic features of the Middle Danube Plain, located at 250 m above sea level. The cellar is located next to the vineyard.

Black Sea region

The Black Sea coast is an area where nearly 30% of Bulgarian vineyards are concentrated. The climate, with warm summers and mild winters, is suitable for growing white varieties. Autumn is warm and long, which favours the accumulation of enough sugars to produce fine white semi-dry wines. Over 50% of white grape varieties in Bulgaria are grown here, and the most common are Dimyat, Riesling, Uni Blanc, Muscat Ottonel, Traminer, even Sauvignon Blanc. The wines have a pleasant fruity aroma, rich taste and elegant freshness. The old endemic variety Dimyat, in addition to being suitable for dry, is often used for the production of dessert wines, as well as for fine aromatic distillates.
