Syrah L'Amphithéâtre 2021 - organic viticulture with biodynamic practices.

The wine is aged for 18 months in a Burgundy barrel (228 l - second fill) and a ceramic amphora. The colour is garnet red with beautiful highlights. Elegant nose with evocative notes of sweet cherries, smoke and spices. The body is balanced with velvety tannins, excellent length and a crisp finish. Pairs wonderfully with grilled vegetables, roast lamb and braised veal with prunes.

Лишени от охолство, лозите впиват корени дълбоко в нея и усвояват ценните минерали, придаващи характерни нотки на виното. Теренът е с идеално източно изложение, посрещащо първите лъчи на слънцето сутрин и предпазващо лозите от прегряване след обяд, когато температурите достигат своя максимум. Разположението на лозето по средата на хълма осигурява на лозите отлични дренаж и проветряване.

Black Sea region

The Black Sea coast is an area where nearly 30% of Bulgarian vineyards are concentrated. The climate, with warm summers and mild winters, is suitable for growing white varieties. Autumn is warm and long, which favours the accumulation of enough sugars to produce fine white semi-dry wines. Over 50% of white grape varieties in Bulgaria are grown here, and the most common are Dimyat, Riesling, Uni Blanc, Muscat Ottonel, Traminer, even Sauvignon Blanc. The wines have a pleasant fruity aroma, rich taste and elegant freshness. The old endemic variety Dimyat, in addition to being suitable for dry, is often used for the production of dessert wines, as well as for fine aromatic distillates.

Syrah

Syrah/Shiraz - Two names of one and the same grape variety - the winemakers from the Old world use Syrah and the ones from the New world - Shiraz. The grape is a deep red, even the pulp, therefore this variety is not suitable for blanc de noir wine style. Syrah wine has specific floral aromas in its youth and develops notes of herbs and spices such as white and black pepper as it ages. These varietal specifics come out better when blended with a small amount of Viognier - a method gaining popularity more and more around the world. Syrah produces wines capable of ageing and improving over decades, which enhances its plummy and almost oriental spicy flavours.
