Eolis Merlot & Cabernet Sauvignon & Cabernet Fran 2015
This blend has a special meaning for us. We make it only in exceptional vintages in which by our opinion the wine reveals in its purest form the terroir character of our vineyards. 2015 was special for us because of the cool summer, the wines stand out with elegant harmony between fruit flavors, ripe and silky tannins and delicate but solid acidity which result in sensation of freshness. The challenges of the nature inspire us. The wines from this vintage remind forest after rain smell. Particularly exceptional was the Cabernwt Fran with fine aromas of chocolate raspberries and delicate floral notes ( tulip and violets ). This delicacy on the pallet is in harmony with powerful but tamed earthy tones of the Cabernet Sauvignon and the smoothness of the Merlot. The wine is aged 18 months in 400 litres French barrels. It develops gracefully in a bottle. Eolis red blend 2015 has a serious aging potential. You can savor it today but an hour decanting prior to consuming is recommended. The will definitely surprise you during the next 6 to 8 years. It has won a bronze medal in Decanter 2019.

In this region, which includes Southern Bulgaria, the climate is temperate continental protected from northern winds thanks to Stara Planina, with good rain distribution. It includes the central parts of the Thracian lowland and parts of Sakar. Most of the red grape varieties are concentrated in this area. Mavrud, Merlot, Cabernet Sauvignon, Red Muscat, Pamid and others are grown. The climatic conditions of the region favour the production of rich, dense, memorable red wines, especially from the varieties Cabernet Sauvignon and Mavrud. Good wines from the local variety Mavrud are especially valued for their aroma and taste of small red fruits, spices and herbs.

Southwest of France is Merlot’s birthplace - the regions of Saint-Émilion and Pomerol. Merlot is nowadays widely planted across the world much like Cabernet Sauvignon because it is an early maturing grape variety and because of its ability to ripen fully even in slightly cooler climates. Smooth, velvety, soft and rounded - an “easy drinking" wine with tender tannic structure - these are the common descriptions of Merlot wines.
