Rosalea Cabernet Sauvignon Writer's Wine 2021
On the soft hills of Sakar Mountain, not far from the town of. At an altitude of 130 m, on cinnamon and grey forest soils, are the vineyards of Rosalea with Cabernet Sauvignon. The grapes are harvested between late September and early October. Fermentation took place in 4 small tanks of 500 and 750 litres capacity, with hand-dipping of the cap and pouring.
The jewel in the final blend is the Cabernet from their 'organic' vineyard.
When the wine is drained after the alcoholic fermentation is complete and the solids are pressed in a basket press, the autoclave is separated from the press fractions and only this goes into the final blend of wine. The malolactic fermentation took place in barrels and the wines were aged in them for 10 months.
A superb Cabernet with bottle ageing potential. Would pair excellently with grilled steak.
