The wine is fermented in stainless steel and ages 12 months in French barriques and from 12 to 14 months in bottle before market release. Ripe and intense flavors of cassis, mulberry, black cherry and blueberry are complimented by vanilla, sweet spices – clove, cinnamon, coffee and dark chocolate. Excellent balance and ripe, silky tannins. A big potential for development in a bottle. Excellent pairing for slow cooked meats, aged cheeses and grilled meats.

Villa Velis
Velis Vineyards is a unique Bulgarian-German wine project, which is born from the love for wine, nature and art. For the winemakers of Villa Velis, the wine is the most noble interpretation of the spirit of nature as the German dramatist Fridrich Hebel says. The story begins in 2010, when they start to revitalize abandoned vineyards around the village of Karabunar in the Bulgarian Trachian valley. Nowadays in Bulgaria, Velis Vineyards cultivates traditiona,l popular varieties – Sauvignon Blanc, Chardonnay, Cabernet Sauvignon, Cabernet Franc, Pinot Noir, Syrah, Petit Verdot and Merlot. They make the wines in their own winery Villa Velis in the village of Karabunar. In Germany they grow, Riesling, Chardonnay and Pinot Noir, which they vinify in their own modern winery in Flörsheim-Dalsheim. The main priority of Velis Vineyards is the high quality of the grapes. To achieve it the yields are limited to 5000 kg. from a hectare and the grapes are only hand-picked in small 10 kg. baskets. For the Heaven’s Door series, the Bulgarian grapes аre transported to the German winery in Rheinhessen by refrigerated trucks. There the grapes are fermented and the wines age in French barriques. The delicate interventions are the key to the finesse and elegance of the wines. The Velis Vineyards series are white, rose and red wines with solid aging potential. They impress with structure, variety of aromas and potential to surprise in time. The reserve wines age in French barriques for 12 months and develop smooth and ripe tannins. The following bottle aging of these wines also adds to the balance, depth and complexity. Villa Velis is the series produced by Bulgarian winemakers and vinified just next to the vineyards in Karabunar. This series include wines from Sauvignon Blanc and Chardonnay, rose from Pinot Noir, as well as reds from Cabernet Sauvignon, Syrah, Petit Verdot and Merlot and blends between them. The wines from the Heaven’s Door series are mainly blends. They are mainly fruit driven and the proportions between the varieties in the blends vary each year depending on the vintage. The Heaven’s Door wines have short contact with French oak. The wines from this series are from Bulgarian grapes but vinified in the German winery. Since 2021 Villa Velis near Karabunar welcomes guests for tastings and also offer well developed hotel and restaurant facilities.

In this region, which includes Southern Bulgaria, the climate is temperate continental protected from northern winds thanks to Stara Planina, with good rain distribution. It includes the central parts of the Thracian lowland and parts of Sakar. Most of the red grape varieties are concentrated in this area. Mavrud, Merlot, Cabernet Sauvignon, Red Muscat, Pamid and others are grown. The climatic conditions of the region favour the production of rich, dense, memorable red wines, especially from the varieties Cabernet Sauvignon and Mavrud. Good wines from the local variety Mavrud are especially valued for their aroma and taste of small red fruits, spices and herbs.
