Domaine Karanika
The story of Domaine Karanika is rooted in the lifelong dream of two individuals on a quest for exceptional wine. Founded by Laurens M. Hartman-Karanika, the son of a Greek mother and a Dutch father, and his wife, Annette van Kampen, both of whom spent their entire lives in the Netherlands, their journey into the world of wine began in pursuit of their shared passion and a desire for wines that transcended the commercial norm. With approximately 15 years of combined experience in various management positions within the publishing industry, Laurens and Annette found themselves drawn to the world of fine wine. Dissatisfied with the proliferation of “Parkerized” wines, they embarked on a life-changing journey in early 2004. Their dream was clear: to create world-class organic sparkling wines using only the traditional method (methode traditionelle). Today, Domaine Karanika’s vision is a reflection of this remarkable journey. It is a vision that centers on crafting excellence in perfect harmony with nature—a celebration of purity, tradition, and the relentless pursuit of perfection. Аминдео и едноименното защитено наименоване за произход (PDO) Amynteo се намира на северозападната страна на планината Вермио. Ксиномавро
Може би най-цененият местен червен сорт в Гърция, Ксиномавро се отглежда в цяла Северна Гърция, но най-известните му вина са от Науса в северната част на Македония. Той е единственият позволен да носи контролираното наименование за произход (PDO) Goumenissa, Amynteo и Naoussa, последното именно станало и синоним за сорта. Често е сравняван с Небиоло, вината се отличават с блед цвят, високи нива на киселинност и мощни танини, както със специфични аромати на ягода, сушен домат и маслина. Ксиномавро често може да се възползва от дълго отлежаване в бутилка: най-добрите вина, произведени от лозя с по-нисък добив и отлежали в дъб, могат да да отлежават с десетилетия, като развиват изключително сложни аромати на цветя, билки, подправки, кожа и и землисти нотки. Напоследък редица производители започват да произвеждат вина, които са по-достъпни в младостта си (по-плодови и с по-меки танини). Използвайки по-зряло грозде и по-малко екстракция, тези вина са много по-плодови, с по-ниски нива на киселинност и често отлежават в нов дъб. Някои производители блендират Ксиномавро с Мерло, за да омекотят мощните му танини.
