Dragomir Grand Reserve Rubin & Merlot & CS 2015 2015
A complex, opulent, aristocratic wine created by the family of oenologists Konstantin Stoev and Natalia Gadjeva together with their young colleagues in the Dragomir wine estate in the village of Brestnik.
The ruby comes from an array in the village of Belashchitsa, not far from Plovdiv, on a northeastern slope of the Rhodope Mountains, 280-320 m above sea level. The plantation is 14 years old. The merlot and cabernet sauvignon are from 12-year-old vines in the village of Svirkovo, South Sakar.
The wines are aged by varietal for 42 months in new French oak barrels of 225 l. The final blending is followed by a return to the barrels for another 6 months. The wine is bottled in March.
This wine is just such an expression - both of our oenological skills and of a rich vintage.

Dragomir
The owners are established names in the wine circles, successfully practicing the profession. These are the oenologists Natalia Gadjeva and Konstantin Stoev, who are also masters of all wines released under the Dragomir brand - Pitos, Sarva, Karyzma, All In One, Amritta and the rose wine Sarva Rose. The location of the cellar and the tasting room is in the city of Plovdiv. The two have serious observations on the potential of different neighborhoods in Bulgaria and, not just want to make good wine, they are looking for wine with character. Wines are mainly blends obtained from grapes in well-selected rows of certain vineyards, controlled year-round by them. The batches of the individual brands are limited quantities and are bottled once. Before being offered on the market, wines have bottled aging, with the most elite batches maturing in a bottle for at least 12 months. The future is in front of this oenological family, and we will follow with interest each of their crops.

In this region, which includes Southern Bulgaria, the climate is temperate continental protected from northern winds thanks to Stara Planina, with good rain distribution. It includes the central parts of the Thracian lowland and parts of Sakar. Most of the red grape varieties are concentrated in this area. Mavrud, Merlot, Cabernet Sauvignon, Red Muscat, Pamid and others are grown. The climatic conditions of the region favour the production of rich, dense, memorable red wines, especially from the varieties Cabernet Sauvignon and Mavrud. Good wines from the local variety Mavrud are especially valued for their aroma and taste of small red fruits, spices and herbs.

Rubin Bolgarskii, or simply Rubin, is a dark-skinned crossing of Nebbiolo and Syrah created in Pleven in 1944. Rubin is grown not only in Bulgaria but also in Moldova, Romania and Slovenia. The wines are of good-quality and high in content of anthocyanins, the compounds responsible for the deep colour of the wine. Rubin's peppery flavour can be attributed to the Syrah, as well as its pleasant crushed-violet aromatic profile, while the tannic structure comes from the Nebbiolo. Wines made from this variety are often aged in barrel where the vanilla and smoky flavours soften the tannins further.
