Eolis Syrah 2017
The region of eastern Rhodopi Mountain is one of the best terroirs for Syrah in Bulgaria. This is a grape which is strongly influenced by the soils and the specific of the vineyard and the environment. That is why we always aim to do the maximum to purely express the beauty of its character. This process starts in the vineyard as we green harvest and use biodynamic mixtures to enhance the balanced ripening. The fermentation happens in small stainless steel vats, with controlled temperature and the must is worked manually but delicately without aiming maximum extraction. This reflects in mildness and elegance of our Syrah. Noble and fine nose of violet, spices, red berries and delicate anise. Juicy medium body, with berries coated freshness and silky ripe tannins. The finish is long and fruity-mineral. The aging is done in French 400 litres barrels. The wine develops gracefully in a bottle. Our meat suggestions are lamp chops with herbs, tandoori chicken skewers, roasted rabbit with plums. For vegetarians and not only we offer slightly roasted Camembert with black pepper and thyme.

Eolis Estate
Eolis Estate is a family project of Kremena Dimova-Wunderli, whose vineyard is located in the village of Malko Gradishte, at the foot of the Eastern Rhodopes, 15 km from Svilengrad Kremena's husband is a hereditary grape grower from Montreux in Switzerland and does not hesitate to invest in wine, anticipating the potential of the terroir. They started in 2005 with 3 hectares of vineyards, and in 2018 they planted 5.6 ha new ones, including the local varieties Mavrud and Rubin. Since 2016, vines have been grown according to the principles of biodynamics. The vinification is done in Bratanov winery under the consultation of the Swiss oenologist Mark Wunderli, who created the style of Eolis wines from the very beginning.

In this region, which includes Southern Bulgaria, the climate is temperate continental protected from northern winds thanks to Stara Planina, with good rain distribution. It includes the central parts of the Thracian lowland and parts of Sakar. Most of the red grape varieties are concentrated in this area. Mavrud, Merlot, Cabernet Sauvignon, Red Muscat, Pamid and others are grown. The climatic conditions of the region favour the production of rich, dense, memorable red wines, especially from the varieties Cabernet Sauvignon and Mavrud. Good wines from the local variety Mavrud are especially valued for their aroma and taste of small red fruits, spices and herbs.

Syrah/Shiraz - Two names of one and the same grape variety - the winemakers from the Old world use Syrah and the ones from the New world - Shiraz. The grape is a deep red, even the pulp, therefore this variety is not suitable for blanc de noir wine style. Syrah wine has specific floral aromas in its youth and develops notes of herbs and spices such as white and black pepper as it ages. These varietal specifics come out better when blended with a small amount of Viognier - a method gaining popularity more and more around the world. Syrah produces wines capable of ageing and improving over decades, which enhances its plummy and almost oriental spicy flavours.
