The vineyards of Pinot Noire are 13 years old, located at the foot of the Provadian Serta plateau. Pleasant fruit aromas of ripe strawberries, cherries, earthy notes and woody mushroom. Elegant full body, presenting a good balance between fruit and earthy flavours. Pairs well with delicate cheeses (brie, mozzarella, etc.) and with feta or goat's cheeses that are fresher and saltier. White or red meats and sausages are also suitable accompaniments.

Изба Одесос е малък семеен винен проект, чиято идея се роди по време на дълъг презокеански полет, доразви се в продължение на няколко на брой винарски кампании в Южното полукълбо и узря достатъчно, за да бъде реализирана пет години по-късно във Варна. Така 2020 година бележи началото за нас с първата ни официална винарска кампания у дома. Избата не разполага със собствени лозя, а в основата на концепцията ни заляга търсенето на най-добрите тероари и лозя от Северния Черноморски регион, за да представим нашия прочит на идеята за регионално крафт вино.

Black Sea region

The Black Sea coast is an area where nearly 30% of Bulgarian vineyards are concentrated. The climate, with warm summers and mild winters, is suitable for growing white varieties. Autumn is warm and long, which favours the accumulation of enough sugars to produce fine white semi-dry wines. Over 50% of white grape varieties in Bulgaria are grown here, and the most common are Dimyat, Riesling, Uni Blanc, Muscat Ottonel, Traminer, even Sauvignon Blanc. The wines have a pleasant fruity aroma, rich taste and elegant freshness. The old endemic variety Dimyat, in addition to being suitable for dry, is often used for the production of dessert wines, as well as for fine aromatic distillates.

Pinot Noir

Pinot Noir is the dominant red wine grape of Burgundy, a challenge for every single vine grower and wine producer. It can be found in Germany (as Spätburgunder), Italy (Pino Nero), Chile, South Africa, Australia, New Zealand and the USA. The wines show a specific aroma of red berries and cherry depending on the vinification method employed - from fresh red cherries in lighter wines to stewed black cherries in weightier examples, many of them also showing hints of earthy flavours.
