An unusual, complex and serious rosé from Syrah, for fans of more structured and dark rosés! Made using the Saignée method (draining the juice from the container after a few hours of standing with the skins, without pressing) from the best grapes from a selected parcel, picked at full phenolic ripeness as for a red wine. Fermentation is spontaneous, with the natural microflora of the vineyard or so-called 'wild' yeasts. It started in an inox vat and finished in barrels with a total ageing of 20 months in only 2 Bulgarian 400 litre oak barrels, second fill. The wine is not cold stabilised - a harmless crystalline lees may have appeared.

Produced in a limited quantity of 950 bottles.

Deep pink colour with delicate copper tints. Complex nose of ripe red fruits and herbs, which are also revealed in the flavours. The body is juicy and rounded, complementing the flavour with spice nuances, cherry and caramel. A soft finish of ripe strawberry and blackcurrant with a long aftertaste. Suitably partnered with rich tuna salads, duck with fruit sauces, lamb steaks (alangue) and also spicy curries.

Bratanov Winery

The Bratanov family cellar is located near the village of Shishmanovo, South Sakar. In the period 2006-2008, they planted 24 hectares of their own vineyards with the classic varieties Merlot, Syrah, Cabernet Franc, Chardonnay, as well as with the local Rubin and Tamianka, in order to restore the hereditary viticulture tradition after a 50-year break. The terrain is located on sunny hills, and the nearby river Maritsa and the winds penetrating along it from the Aegean Sea form an almost Mediterranean climate. The winery has an experimental spirit, uses different methods of winemaking and is not afraid to use spontaneous, "wild" fermentation. Since 2015, the chief oenologist in the winery is a young oenologist Maria Stoeva, who graduated in Dijon, France, who together with the owners focuses on wines that best reflect the characteristics of the terroir and have a strong personality.

Thracian valley

In this region, which includes Southern Bulgaria, the climate is temperate continental protected from northern winds thanks to Stara Planina, with good rain distribution. It includes the central parts of the Thracian lowland and parts of Sakar. Most of the red grape varieties are concentrated in this area. Mavrud, Merlot, Cabernet Sauvignon, Red Muscat, Pamid and others are grown. The climatic conditions of the region favour the production of rich, dense, memorable red wines, especially from the varieties Cabernet Sauvignon and Mavrud. Good wines from the local variety Mavrud are especially valued for their aroma and taste of small red fruits, spices and herbs.

Syrah

Syrah/Shiraz - Two names of one and the same grape variety - the winemakers from the Old world use Syrah and the ones from the New world - Shiraz. The grape is a deep red, even the pulp, therefore this variety is not suitable for blanc de noir wine style. Syrah wine has specific floral aromas in its youth and develops notes of herbs and spices such as white and black pepper as it ages. These varietal specifics come out better when blended with a small amount of Viognier - a method gaining popularity more and more around the world. Syrah produces wines capable of ageing and improving over decades, which enhances its plummy and almost oriental spicy flavours.
