Shevka is an old Bulgarian variety with a rich history. The color is clear, brilliant, and ruby red. The aroma reveals black currant, ripe blackberry, and wild strawberry with delicate “wild” nuances, complemented by oregano, bay leaf, and chocolate. The palate is fresh, light, and exceptionally crisp, with soft tannins, a subtle minerality, and an elegant, clean finish. The wine was fermented with wild yeast without added sulfites or other additives.
