Канонау е сардинското прозвище за сорта Гренаш. Лозовите масиви са на възраст от 45 години и лежат върху варовити почви. Ферментацията е с диви дрожди и протича в бетонени съдове. Виното отлежава 24 месеца в циментови съдове.

Tenute Dettori is an artisan wine cellar inextricably linked to the land on which it is located - Badde Nigosolu is an amphitheater of 33 hectares at a height of 250 meters to the northwest to Golfo dell'Asinara in Sardinia. Wine has been made here for centuries, and many of Dettori's vines are more than a century old. In Dettori, technology and fashion are banned. Harvests are harvested by hand, no chemicals are used, but ancient agricultural techniques (they are completely organically and biodynamically certified). The cellar, built underground, follows the same principles. Only stainless steel and concrete tanks are used, where spontaneous fermentation takes place without temperature control and without the use of sulphites, except for bottling if necessary. Only local varieties are grown: Vermentino, Pascale, Moscato di Sennori, Monica and, of course, Cannonau. Grenache (Garnacha) is a red-wine grape grown extensively in France, Spain, Australia and the United States. Grenache is the French name for the grape, while in Spain it is known as Garnacha, and on the island of Sardinia they call it Cannonau. In France it is most commonly found in the classic Southern Rhone Blend ( it is the main grape variety in Chateauneuf-du-Pape) but also plays a main role in one of southern France's signature Rosè wine style in Provence.
