Olivier became the owner-agronomist-winemaker-marketing-seller of Domaine du Clos des Rocs - 6 hectares of impressively diverse plots of old Chardonnay vines. He switched to organic farming and repaired the cellar. With the American debut of its wines in 2014, it immediately became clear that the Clos des Rocs deserves a place among the highest category of mansions in southern Burgundy.
