Telavi Old Cellar focuses on the local varieties Rkatsiteli and Saperavi. Telavi is the capital and administrative center of the eastern province of Georgia, Kakheti. The vineyards of Rkatsiteli are 40 years old. The wine ferments with the bunches for a period between 5-6 months, in order to achieve a richer extraction. The vineyards with Saperavi are 30 years old. Vinification combines the traditional Georgian method and the European method. The wine ferments in kvevri and then matures in oak.
