The grapes are picked earlier, at lower sugars, to have naturally lower alcohol. The juice is fermented in an inox vessel, and at the end of fermentation is capped in a bottle where the bubbles naturally form. It is aged for 6 months in the bottle, where the carbon goes into a more permanent form, and the bubbles become finer thanks to the fine lees. 6 months after that it is de-fermented (the lees are removed), topped up with the same wine and recorked.

Orbelia Winery

Orbelia is a family winery founded by Kostadin Chorbadjiiski and his family in 2013. It is located at the foot of Mount Belasitsa, near the village of Kolarovo, 12 km. west of Petrich. Orbelia is the ancient Thracian name of the mountain range and means white, beautiful mountain. Orbelia has its own vineyards, which grow international varieties such as Cabernet Franc and Syrah, but special attention is paid to local ones - Melnik 55, Sandanski Muscat and others. Traditional methods of vinification are used and some of the wines are aged in French, Bulgarian and American oak barrels.

Struma Valley

Struma Valley

The Struma Valley region covers the Southwestern part of Bulgaria and the Bulgarian part of Macedonia. The climate of the region is specific and is highly influenced by the warm currents from the Mediterranean Sea. The main grape varieties here are the local endemic Shiroka Melnishka vine, Melnik 55 (cross between Shiroka Melnishka vine and the French variety Valdigie), but also the international varieties Cabernet Sauvignon, Merlot, Syrah and others. Due to the dryer climate and the higher temperatures, the wines develop warm southern tones in the aroma, with nuances of ripe fruit and a densely rich body. Of particular interest are the wines from Shiroka Melnik vine, partly due to the fact that the variety is difficult to grow because it ripens in late autumn. Today, the region is the most dynamically developing in Bulgaria, with many new, small, family owned wineries, increasingly focused on the quality and terroir expression of the wines they produce.
