The name of the wine, BIN 60, comes from the German expression "Ich bin" (I am) and indicates the age of Ivaylo Genovski in the year the wine was first produced.

Rich, opaque ruby color. Complex nose with notes of sweet red pepper, cherry, cocoa, earthy notes, rosemary and mint oil. The body is juicy, fruity and ripe with notes of oil, black fruit and roasted red pepper in the long finish.

Санта Сара

Винарско имение Санта Сара е създадено с мисията за правенето на безкомпромисни грозда и вина, с фокус върху качеството, иновативна визия и революционен подход на производство. Виненото приключение на семейството на Ивайло Геновски започва в началото на 90-те години в Берлин. След рухването на стената възможностите за нов бизнес са буквално навсякъде. Българинът защитава докторат по промишлена роботика в Хумболтовия университет, когато по необходимост започва да търгува с българско вино. Макар и без собствена изба в България, през 2001 г. Ивайло купува хайтек оборудване за микровинарство, както и станалите легендарни три каравани, с които то се транспортира, наема гараж в двора на винпрома в Нова Загора и дава началото на проекта си „Санта Сара“, кръстен на дъщеря му. Визията на Ивайло е за прецизен избор на подходящи мини терени и сортове, създаване на дългосрочни партньорства със самите лозари, намален добив за по-високо качество и изключителен контрол на процесите като предпоставка за създаването на запомнящи се вина. След дълго търсене на място с подходящи почви и климат, близко до морето, което винаги е свързано с цивилизации и култура, през 2013 г. екипът на „Санта Сара“, към момента в състав: Евгения Георгиева, Калина Дянкова, Невен Бараков, Жулиен Живков, Младен Енев и Тодор Узунов, премества своята работилница в с. Горица, недалеч от Поморие. През пролетта на 2015 г., 2016 г. и 2018 г. са засадени общо 29 ха лозови масиви на територията на избата, а приключението за винени „гаражисти“ продължава с живот и работа сред младите лозя. Освен опита, ентусиазма и експериментаторският дух на своите създатели, винарското имение в близост до морския бряг е приютило и вече поовехтелите каравани на „Санта Сара“ - романтичен спомен от виненото „на колела”.

Black Sea region

The Black Sea coast is an area where nearly 30% of Bulgarian vineyards are concentrated. The climate, with warm summers and mild winters, is suitable for growing white varieties. Autumn is warm and long, which favours the accumulation of enough sugars to produce fine white semi-dry wines. Over 50% of white grape varieties in Bulgaria are grown here, and the most common are Dimyat, Riesling, Uni Blanc, Muscat Ottonel, Traminer, even Sauvignon Blanc. The wines have a pleasant fruity aroma, rich taste and elegant freshness. The old endemic variety Dimyat, in addition to being suitable for dry, is often used for the production of dessert wines, as well as for fine aromatic distillates.

Mavrud

Mavrud is a dark-skinned grape variety of Bulgarian origin, widely planted in the Thracian valley, more precisely in the region of Asenovgrad. The grape’s name is derived from the Greek mavro, meaning black, and the wines it produces usually are of an inky colour. They also have pronounced tannins and excellent acidity, with stewed-fruit flavours on the palate with some herbal characteristics. It is no easy task to produce wine from Mavrud alone, but whoever succeeds creates a wine that certainly does not lack character.
