Ayala

AYALA is one of the oldest manufacturers in Champagne, located in Aÿ for 150 years. Founded in 1860 by Edmund de Ayala, whose taste for adventure established him in Aÿ, to learn more about winemaking. However, AYALA owes its rapid growth to Fernand de Ayala, Edmond's younger brother, who settled in London in 1863, where he mingled with the British aristocracy and presented the unique taste profile of Maison de Ayala to British connoisseurs. The 1920s were a remarkable golden age, during which AYALA Champagne produced over a million bottles each year, ranked among the best Champagne brands in the world and positioned itself as the official supplier to the royal courts of England and Spain. After World War II, Ayala's fame waned and its leaders reoriented themselves, occupying important positions in Champagne's trade associations. In 2005, the Bollinger family bought the mansion with the intention of restoring it to its former glory. This is also the beginning of the revival of AYALA champagne, with a complete restoration of winemaking, preserving the family spirit of origin.
