Château de Fargues
Fargues is the birthplace of the Lur Saluces family of Gironde. For more than five centuries, they have owned various estates and produced wine in the Sauternes and Bordeaux region. The vineyard is 15 hectares on soil of sand, clay and gravel, planted with 80% Semillon and 20% Sauvignon Blanc. Small quantities are produced and there is no second wine. The grapes develop Botrytis cinerea, also known as noble mold. It increases and saturates the aromas in the grain, but is extremely capricious. The window of time in which the harvest must be harvested is very small - neither earlier nor later. For this reason, there are years when you will not find the famous Sauternes of Château de Fargues. The chateau refuses to bottle any compromise with the quality of the harvest. You have to try it to understand what it means to maintain such a high class.
