Dandelion Lion's Shiraz, Riesling Elena Brooks 2021
The Shiraz skins were fermented in open vessels on Riesling skins for a period of 11 days, being hand-dipped twice a day before being pressed. The wine is aged in new and mostly old French oak barrels for 18 months. The colour is deep red with violet hues. The nose reveals aromas of cherries, mulberries, blueberries and subtle traces of vanilla. The aftertaste is long and leaves a sensation of lots of red fruit, soft tannins and delicate oak. An ideal partner for red meats with rich sauces and spices, pasta with veal and cheeses and duck magret with cranberries.

Elena Brooks
Elena Brooks is the chief winemaker and CEO of Dandelion Vineyards. The wine produced there combines decades of experience, the fruits of the hereditary vineyards and the best traditions of artisanal winemaking. Dandelion Vineyards is a combination of old vineyards, a young winemaker and a few friends who help each other, and this creates the perfect winery. Elena Brooks comes from the old wine-growing region of the town of Lyaskovets. Already in high school, in the early 90's, she had the rare chance to translate professional conversations between Australian and Bulgarian winemakers, thus learning about the magical world of wine. Her passion for winemaking took her to Australia, where she became one of the first Bulgarian citizens to graduate as an oenologist at the University of Adelaide. From the hundred-year-old vineyards of Barroso, Eden Valley, McLaren Vale and Adelaide Hills, Elena Brooks has created high-quality wines that have won more than five hundred international awards.

Syrah/Shiraz - Two names of one and the same grape variety - the winemakers from the Old world use Syrah and the ones from the New world - Shiraz. The grape is a deep red, even the pulp, therefore this variety is not suitable for blanc de noir wine style. Syrah wine has specific floral aromas in its youth and develops notes of herbs and spices such as white and black pepper as it ages. These varietal specifics come out better when blended with a small amount of Viognier - a method gaining popularity more and more around the world. Syrah produces wines capable of ageing and improving over decades, which enhances its plummy and almost oriental spicy flavours.
