Wine Hippies

Wine Hippies

The people behind the Wine Hippies project are those of Dimitar Nikolov and Atanas Balev. Both are known in the Bulgarian winery and enjoy an enviable experience with years of experience in this field. Dimitar Nikolov is a professional sommelier and together with his wife Donka manager and project Apollowine, where he first created his own series of wines in 2017 (blend with Shiroka Melnishka Loza, vintage 2017, announced in Villa Melnik and Chardonnay Barrel fermented 2015 together with winery Zelenas, which he consults). Atanas Balev is a restaurateur who created a real sensation in the last four years as manager of the Cosmos restaurant in Sofia. Here he successfully experimented with his own series of wines, exclusively for Cosmos restaurant, which can still be found in the wine list. What the two have in common is the belief that some Bulgarian wineries are doing extremely well with some of their varieties, because they have the most suitable terroirs for them. So they decided to make a selection of individual terroirs, which are emblematic of certain cellars and varieties that correspond to the idea of a presentation of unusual wines. And so through the Wine Hippies project, Dimitar and Atanas tell the story of themselves as rebels and non-standard wine thinkers.

Thracian valley

Thracian valley

In this region, which includes Southern Bulgaria, the climate is temperate continental protected from northern winds thanks to Stara Planina, with good rain distribution. It includes the central parts of the Thracian lowland and parts of Sakar. Most of the red grape varieties are concentrated in this area. Mavrud, Merlot, Cabernet Sauvignon, Red Muscat, Pamid and others are grown. The climatic conditions of the region favour the production of rich, dense, memorable red wines, especially from the varieties Cabernet Sauvignon and Mavrud. Good wines from the local variety Mavrud are especially valued for their aroma and taste of small red fruits, spices and herbs.

Rubin

Rubin

Rubin Bolgarskii, or simply Rubin, is a dark-skinned crossing of Nebbiolo and Syrah created in Pleven in 1944. Rubin is grown not only in Bulgaria but also in Moldova, Romania and Slovenia. The wines are of good-quality and high in content of anthocyanins, the compounds responsible for the deep colour of the wine. Rubin's peppery flavour can be attributed to the Syrah, as well as its pleasant crushed-violet aromatic profile, while the tannic structure comes from the Nebbiolo. Wines made from this variety are often aged in barrel where the vanilla and smoky flavours soften the tannins further.
