False Bay Peacock Wild Ferment Syrah Waterkloof 2022
The nose shows prominent notes of black fruit, slight leather, black pepper, red berries and an earthy undertone. The palate has a well-integrated acidity and great structure, whilst developing into a spicier character and ending with well-balanced, ripe tannins. It’s a great wine on its own and can also be enjoyed with a classic peperoni pizza.

Waterkloof
UK Wine Merchant Paul Boutinot makes his first wine in South Africa in 1994 called False Bay and exports in around the world. After a lifelong search he buys Waterkloof in 2003 and makes his first Waterkloof wines in 2005. In 2008 he receives Championship Status with his Biodiversity & Wine Initiative. 50% of the farm is under natural fynbos. In 2008 a modern winery and cellar is built, and in 2009 it is open to the public with a restaurant in tasting lounge. The philosophy has always been to produce fine wine from cultivated and respected soils. Organic farming with natural wine making over the years Waterkloof have established several wine ranges, with different price points and with specific definition. Off the Waterkloof property apparoximately 200 000 bottles are produced. Also they buy in grapes under the False Bay Vineyards umbrella and make 1.8 million bottles which is sold in South Africa and around the world. In 2005 we the first wine under the Waterkloof range ws released, a Sauvignon Blanc. It took them 17 years to release two more wines under the Waterkloof range namely a Chenin Blanc and a Syrah.

От по-свежи, леки и елегантни към по плътни, наситени и концентрирани вина. Климатът е сравнително топъл с много интензиво слънце до обяд, но има и хладни течения от югоизток, най-вече следобяд от близостта с Атлантическия океан. Каберне Совиньон и Шенин Блан са най-добре изявяващите се сортове от района, като Каберне Совиньонът развива очарователно землисто ухание и минерално усещане на вкус, особено от лози засадени на гранитни почви, а Шенина се получава изключително свеж, изобилен, плодово ароматен и наситен, а и е добре адаптивен, тъй като толерира сушите и горещините, характерни за летата в Стеленбош. Сира, Пти Вердо, Мерло, Шардоне, Совиньон Блан и Ризлинг също даават страхотни вина от този тероар, като специален е Пинотажът, уникален, червен сорт кръстоска между Пино Ноар и Сензо създаден в Южна Африка през 1925 година. Стеленбош е родното място на този сорт и както почвите, така и климатичните и топографски особености са много подходящи за отглеждането му.

Syrah
Syrah/Shiraz - Two names of one and the same grape variety - the winemakers from the Old world use Syrah and the ones from the New world - Shiraz. The grape is a deep red, even the pulp, therefore this variety is not suitable for blanc de noir wine style. Syrah wine has specific floral aromas in its youth and develops notes of herbs and spices such as white and black pepper as it ages. These varietal specifics come out better when blended with a small amount of Viognier - a method gaining popularity more and more around the world. Syrah produces wines capable of ageing and improving over decades, which enhances its plummy and almost oriental spicy flavours.
