The Cami del Drac, or "The Way of the Dragon", range consists of three wines and is named after a characteristic rock formation resembling a dragon. In this wine we have only Carignan Blanc and the old vineyard with this rare mutation of its more famous red sibling is located at 550m altitude, between the peaks of the Pyrenees and the Mediterranean coast.
Grapes are hand-picked but late harvest (second half of September), a month more than the other whites of the Roussillon. A very long and slow fermentation takes place, at 18 to 20°C. Lengthy lees contact follows and after the malolactic fermentation completes the wine is bottled unfined. The result is an expressive, floral and vibrant wine, with citrus fruit flavours combined with a subtle herbal twist and minerality through to the finish.

Carignan Blanc
The white mutation of this variety, better known to us as black grape, is known as Carignan Blanc in the south of France, with fewer vineyards now than half a century ago, but it is increasingly valued as an ingredient in high-quality white wines. Like the dark-skinned version, it buds and ripens late and is very susceptible to powdery mildew, but it retains its acidity well and the alcohol content is usually moderate. As Carignan Blanc in France, or Carinena Blanca in Spain, the variety produces light citrus flavours and is usually used in blends, but also for single varietal wines.
